  • 300g mango, peeled and cut into 2.5cm (1 in) cubes

Lemon Dip:

  • 200g Greek yoghurt
  • 2 tbsp lemon curd
  • 2 tbsp chopped mint leaves
  • A few sprigs of mint, leaves picked, for garnish

How To Make Fruit Kebab:

  2. Assemble the Kebabs: Thread one pineapple cube onto a skewer, followed by one strawberry and a piece of mango. Repeat this until each skewer has two of each fruit.
  3. Make the Lemon Dip: In a small bowl, mix the Greek yoghurt, lemon curd, and chopped mint together until well combined.
  4. Serve: Arrange the fruit kebabs on a long platter, placing the lemon dip alongside. Garnish with picked mint leaves for an attractive finish.

Recipe Tips

  • Choose Ripe Fruits: Select ripe pineapple, strawberries, and mango for the best flavor and sweetness. Overripe or underripe fruit can affect the taste of your kebabs.
  • Soak Skewers: If you’re using wooden skewers, soak them in water for 30 minutes before threading on the fruit. This helps prevent them from burning on the grill.
  • Mix Dip Well: Ensure you mix the Greek yoghurt, lemon curd, and mint thoroughly for a smooth and creamy dip. This makes the dip more flavorful.
  • Keep Kebabs Cool: If you prepare the kebabs in advance, keep them in the fridge until you’re ready to serve. This keeps the fruit fresh and refreshing.
  • Garnish Creatively: Use whole mint leaves to garnish your dish for a vibrant look. A pretty presentation makes the dish more appealing and festive.

How To Store & Reheat Leftovers

Place leftover fruit kebabs in an airtight container and store them in the fridge. They will stay fresh for up to 2 days.
