- 2 tbsp olive oil
- 1 onion, chopped
- 1 carrot, diced
- 200 g (7 oz) long grain rice
- 250 g (8 oz) tomatoes, finely chopped
- 500 ml (16 fl oz) hot chicken or vegetable stock
- 150 g (5 oz) sweetcorn kernels
- 90 g (3 oz) frozen peas
- 2 tbsp tomato purée
- Salt and black pepper
- 1 garlic clove, crushed
- Chopped parsley, to garnish (optional)
How To Make Savoury Rice:
- Heat the Oil: Place the olive oil in a frying pan over medium heat. Add the chopped onion and diced carrot, and cook gently for 3–5 minutes, stirring occasionally, until the onion softens but doesn’t brown.
- Add the Rice: Stir in the rice and coat it with the oil. Then, add the chopped tomatoes and hot stock, and stir everything together.
- Simmer the Rice: Add the sweetcorn, peas, and tomato purée. Bring the mixture to a boil, then reduce the heat and let it simmer for 12–15 minutes, stirring occasionally, until the rice is tender and the liquid has been absorbed.
- Season and Serve: Add salt and pepper to taste, then stir in the crushed garlic. Serve the rice immediately, garnished with parsley if desired.

Recipe Tips:
- Boost the flavour: For an extra depth of flavour, add a dash of soy sauce or a teaspoon of smoked paprika when you add the tomatoes.
- Make it creamy: Stir in a spoonful of cream or Greek yogurt at the end to make the dish creamier and add richness.

How To Store & Reheat Leftovers:

In the Freezer: Transfer the cooled rice into a freezer-safe container or zip-lock bag. It can be frozen for up to 1 month.
