For the Icing:

  • 2 × 250g (2 × 8.8oz) tubs of full-fat mascarpone cheese
  • 150ml (5fl oz) double cream
  • 3 tbsp icing sugar, sifted
  • 4 tbsp grated plain chocolate (at least 50% cocoa solids)

How To Make Mary Berry Tiramisu Cake

  1. Prepare the Oven and Tins: Preheat the oven to 180°C/160°C fan/Gas 4 (350°F). Grease two 20cm (8in) round sandwich tins with butter and line the bases with baking paper.
  2. Make the Soaking Liquid: Combine the brandy, freshly brewed coffee, and boiling water in a bowl. Set aside.
  3. Make the Cake Batter: Whisk the eggs and caster sugar in a large bowl until very pale and thick, using a free-standing mixer or electric hand whisk for about 5 minutes. Sift the self-raising flour over the mixture and fold in gently. Dissolve the instant coffee in boiling water and stir into the cake mix.
  4. Bake the Cakes: Divide the batter evenly between the prepared tins. Bake for 20–25 minutes until risen, golden, and springy. Cool on a wire rack and remove the baking paper.
  5. Soak the Cakes: Brush the cooled cakes with the soaking liquid and let them cool completely.
  6. Prepare the Icing: Beat the mascarpone cheese until smooth. Gradually mix in the double cream and icing sugar until creamy.
  7. Assemble the Cake: Place one sponge, soaked side up, on a serving plate. Spread half of the mascarpone icing on top and scatter with half the grated chocolate. Place the second sponge on top, soaked side down, spread the remaining icing over it, and dust with the remaining chocolate.

  • Cool Cakes Completely: Let the cakes cool completely before brushing with the soaking liquid to prevent sogginess and ensure even absorption.
