Ingredients Needed:

  • 2 tbsp olive oil
  • 1 kg braising beef, cut into 2 cm (¾ in) cubes
  • 2 red onions, thinly sliced
  • 1 green pepper, deseeded and diced

  • 1–2 fresh green chillies, deseeded and finely chopped
  • 1 tbsp cumin
  • 2 tsp sweet smoked paprika
  • 400 g tin of chopped tomatoes
  • 350 ml good beef stock
  • 1 tbsp tomato purée
  • ½ tsp light muscovado sugar
  • 2 x 400 g tins of black-eyed beans, drained (add when reheating)
  • Salt and freshly ground black pepper to taste

How To Cook Beef Casserole:

  1. Preheat the Oven: Preheat your oven to 160°C/140°C fan/Gas 3.
  2. Brown the Beef: Heat the olive oil in a large sauté pan or ovenproof casserole dish. Add the braising beef in batches and brown it on all sides until golden. Remove the beef with a slotted spoon and set aside.
  3. Cook the Vegetables: In the same pan, add the sliced onions, diced green pepper, crushed garlic, and chopped chillies. Fry for 3–4 minutes until softened. Stir in the cumin and sweet smoked paprika, cooking for another 30 seconds.
  4. Combine Ingredients: Add the chopped tomatoes, beef stock, tomato purée, and light muscovado sugar. Bring the mixture to a boil, then season with salt and pepper, and stir for a couple of minutes.
  5. Bake: Return the browned beef to the pan, cover with a lid, and transfer to the oven. Bake for 1½ to 2 hours until the beef is tender. Stir in the black-eyed beans 30 minutes before the end of cooking.
